Calamari, sunblush tomatoes and mushroom  linguine

Badly cooked calamari rings are disappointing and rubbery. A good fishmonger in France gave me the secret to perfectly cooked calamari, throw the rings into a frying of hot garlic butter and a dash of oil for literally 2 mins with a few sunblush tomatoes and slices chestnut mushrooms, drain cooked linguine and pop the calamari mixture on top, add more olive oil if necessary. One can also add thinly sliced and fried good quality chorizo for a surf'turf type dish.
