Carluccio's peasant potatoes
A favourite when you had to go off and work in the fields. Slice onions, potatoes and a couple of fresh tomatoes, sprinkle some dried herbs, garlic toss together with some olive oil. Pop into a preheated oven on a medium to low heat and let it cook slowly. Can beeaten on their own wih a crisp salad or as a side dish to quickly griddled meat. This can be cooked in under an hour too, just put into a preheated medium to hot oven.
