Chicory mixed bean poached egg and bacon platter

A mixture of young broad beans and french beans are in season is the base for this substantial lunchtime salad. Cook broad beans, frozen broad beans also arok well. Skin the broad beans, poach an egg and keep warm. Layer chicory leaves, broad beans, fine beans one on top of each other. Place a fried crouton of bread on top, poached egg and fried bacon bits, drizzle with a mustardy vinaigrette. Just as good if the poached egg is not warm! Crusty bread is a must to go with this salad.
