Prawns on a bed of rich creamy mash

Treat yourself to some large prawns 2 to 3 per portion preferably row, make sure you peel and devein them well.

Make a rich and creamy mash, keep warm, buy some juicy sunblush tomatoes.

Peel and chop a shallot, fry in some butter and a little oil until golden, add prawns and cook until pink, they won't take long, add sunblush tomatoes, a little dash of white wine. Remove prans and keep warm, reduce tomato mixture,salt and pepper to taste.

Place some mash in a non stick ring, place reduced tomato and wine mixture on top of mash and delicately arrange the prawns, serve with finely sliced and braised fennel.

The mash can be replaced by polenta cooked the day before, cooled so it goes solid yo can then cut a square of polenta and griddle it on both sides before proceeding as before. Did this as a birthday supper dish for my oldest friend Sophie's Godmother Nini.

If you can get the pale cream coloured polenta not the ghastly yellow instant type if you can. Good italian delis and food shops do it. Also when preparing it use a non-stick saucepan to avoid probs.
